Mezze Penne made from organic CAPPELLI durum wheat wholemeal semolina milled from whole grains, cultivated by the certified Italian organic agricultural supply chain IRIS. Cappelli wheat dates back to the early 1900s and has not undergone genetic alterations, thus maintaining its organoleptic characteristics. With an intense flavour and aroma, it is thought to be more digestible and less allergenic than modern durum wheats. The fibre is retained during milling, which is good for health and enhances the taste. Excellent when cooked. IRIS pasta is bronze-drawn and produced in a pasta factory built using green building techniques. The production process is classic, respecting optimal times and temperatures to maintain all nutritional content.
